Meal of the day (tangy Chicken)

1 large chicken breast per adult (or chicken fingers, wings, etc) frozen or thawed
1/3 cup soy sauce
2/3 cup brown sugar
1 tsp ginger

Pour soy sauce, brown sugar and ginger into crock pot. Stir well until mixture is fully combined. Add chicken to the mixture and put on low for 6-8 hours or high for 4-6 hours. (please note that if the chicken is frozen it will take a little longer). Let this simmer being sure to turn the chicken over occasionally to ensure that both sides are "sucking up the juices".

If you decide to make this in advance, make it the day before and only cook it till the chicken is just finished cooking. Turn off the heat and then store in the fridge overnight. The chicken will become very juicy and take on the flavors even more. The next morning finish cooking another 1-2 hours and dish out.

Serve with stir fry veggies or mac n cheese. This is an easy and great meal.

Please note: it is a great idea to pour some of the juice into individual bowls for dipping the chicken in as you eat it. This will create an au jou of some sorts and just adds to the flavor.
