1 box noodles (not the no cook noodles though)
1 jar of your favorite sauce
1 pkg frozen spinach
1 tub ricotta cheese
1 pgk shredded cheese
Cook your noodles until they are soft but still have just a little bit of firmness to them. While those are cooking steam your spinach until it is limp and ready to eat. Once everything is done, lay your noodles out on a clean surface and spread the ricotta cheese on them so that you cover all but about an inch at one end. (this will be your closing end and you don't want your goop to pour out). Next layer your spinach on top of the cheese and then sprinkle a bit of shredded cheese on top of that. Roll these up leaving that naked end as your closer. Lay them into freezable containers considering each person will eat 1 to 2 for a meal when you add salad and bread. Cover the noodles with sauce and then more shredded cheese. I usually cook them in the oven on 350 for about 15 min until the cheese is golden. Serve what you need and freeze the rest!
