Meal of the day (chicken pot pie)

This is a great freezer meal. You can make as many servings as you want and freeze all your extra for future meals. The ingredients I will post will be for one serving but you can double or triple this for your freezer.

2 chicken breasts, cooked and cubed
1 can carrots cut as small or large as you like (or a cup of frozen/fresh)
1 can potatoes, diced (or 3 fresh)
1 can peas (or 1 cup fresh/ frozen)
onion, diced (this is to taste, some people like a strong onion flavor while others do not. I use about 1/4 of a med onion)
1/2 tsp garlic, minced
2 cups chicken broth
salt to taste

Put everything into the crock pot and cook on high for 4-6 hours. You want all your veggies to be soft. Now at this point you can choose to let this cool and then freeze it or serve it as your meal for the day.

If you choose to serve this immediately set your oven to 350 then mix in a separate bowl 1 egg, 1/2 cup milk, 1 cup Bisquick. After mixing well, coat the top of your chicken mixture and then bake until you have a golden brown topping.

If you choose to freeze it, let it cool completely and then put into a zipper bag. On the outside with your label write the directions for the topping so you don't have to look them up later. 1 egg, 1/2 cup milk, 1 cup Bisquick. Cover the top of your chicken mixture and cook in oven at 350 until Bisquick is golden brown.

This is great for company as it is easy and you have as much or as little as you like with no extra work. Enjoy!
