So I thought I had some Shake n Bake in our cabinet but when I went to grab it I found that it wasn't at all what I thought. OH no! What was I going to do? I promised David some baked chicken and I have nothing to coat it with! That's when my cooking mind went into action and I created something different that I just have to share. (it was so good that we will have a hard time using the old stuff again):-)
Here is what you need:
Chicken breasts (you can cut them into strips if you choose)
croutons or dry stuffing mix
pkt of onion soup mix
1 Tbsp corn starch
olive oil
Heat your oven to 400 degrees. Pour a little olive oil in the bottom of a baking dish (enough to cover the bottom) and put into the oven while it preheats. In a food processor or blender add two or three hand fulls of croutons, the onion mix and corn starch. Mix till very fine (almost powdery). Pour mixture into a bag then put chicken into the bag and shake till well coated. Remove baking pan from oven once oil is hot and add chicken to pan. Cook for about 35-45 min (depending on size of chicken) until chicken is cooked through.
I served this with some scalloped potatoes and broccoli with lemon juice. It has a smokey, onion flavor and is just delish! Hope you enjoy as much as we did!
